If you have been following us on Instagram or know us in person, you will know that travel and food are things that are a big part of our lives and it always brings a smile to our face. Along with these two things, cafes also hold a special part in our hearts.
We love the ambiance of a cafe and we often choose to work there. Even when we travel, we will try and find different cafes to experience the different kinds of drinks and atmosphere. We are reminiscing of our cafe visits in busy Hong Kong and the pretty ones in Los Angeles.
With the current COVID-19 situation, we are unable to go out to cafes and we also don’t know when we will have the chance to travel again. So recently we have started our own stay home cafe series – the Honour and Blessing Home Cafe.
This virtual cafe is where we create drinks that we typically order at a cafe or drinks we have tried from other countries and have loved. We have also created some of our own specialty drinks based on requests from our viewers.
We have been sharing the cafe drinks we make at home with our viewers and it has been so lovely to create things that everyone can enjoy. While I often make a lot of desserts and other baked goods, I don’t usually share the recipes as there are already so many good recipes out there.
However, we have been asked multiple times for our drink recipes and so we would like to share them with you! Especially in a time like this, we want to share some happiness with everyone. We hope our videos and drinks will be able to bring you some relaxation, even if it’s just a minute or two of tranquility.
On the menu today is the Waterfall Matcha Latte. We created this drink as a viewer wanted us to create a drink that is matcha based. This is a drink that is quite similar to the matcha latte that you can get at a cafe, but the aesthetics is what makes it different.
We have named it the Waterfall Matcha Latte because as the matcha is being poured into the glass, it will cascade down like a waterfall.
Time needed: 10 minutes
How to make iced matcha latte
Mix hot water with 6 grams of matcha powder until the powder has been incorporated. Add sugar and stir until dissolved
Sieve mixture to prevent any lumps in the matcha mixture.
Sift in remaining 3 g matcha powder into the whipping cream and whip until 70% done.
Put ice in the cup and pour in the milk.
Slowly pour in the matcha mixture and try to let it pour down the sides of the glass.
Top with matcha whip cream and enjoy!
Use good quality matcha powder as lower grade ones will have a grassy taste and more yellowy tones. For the drink we made this time we used Matcha powder from Matchaeologist.
The ice cube helps with the waterfall effects. If there is only milk, it will be harder to see it cascading down.
Remember to stir well before drinking!
